Avocado Toast Sandwich

**Ingredients:**
* Whole wheat bread / Any bread of your choice - 10 to 12 slices
* Butter - 2 tablespoons
* Avocado - 2
* Garlic (optional) - 1 clove
* Lemon juice - 1 to 1.5 tablespoon
* Onion - 1 (medium size, finely chopped)
* Tomato - 1 (medium size, finely cut)
* Mint leaves - 2 tablespoons (finely chopped)
* Coriander leaves - 3 tablespoons (finely chopped)
* Salt - 1/4 teaspoon + 1/4 teaspoon (or adjust to taste)
* Lemon zest - 1/8 teaspoon
* Chilli flakes - 1/4 teaspoon
* Cream cheese - 1/2 cup
* Mayonnaise - 1 tablespoon
* Peri peri sauce - 1 tablespoon
**Instructions:**

  1. Heat a pan on low flame.

  2. Add 2 tablespoons of butter to the pan and toast 10 to 12 slices of your chosen bread.

  3. After toasting the bread, cut 2 avocados in half, remove the pits, and scoop out the flesh into a mixing bowl.

  4. Add 1/2 teaspoon lemon juice and 1/4 teaspoon of salt to the avocado.

  5. Mash/Grind the avocado and salt together until you achieve a smooth consistency.

  6. Add 1 tablespoon lemon juice, the finely chopped onion, tomato, mint leaves, coriander leaves, 1/4 teaspoon salt, lemon zest and chilli flakes.

  7. Mix everything together until well combined.

  8. Spread a generous amount of the avocado mixture onto one side of each toasted bread slice.

  9. Place the chopped lettuce leaves on top of the avocado mixture on each toast.

  10. Spread the cheese mixture onto one side of another toasted bread slice.

  11. Stack these two slices of avocado-filled and cheese-filled bread together to form a sandwich.

  12. Wrap each sandwich in cling film.

  13. Cut the sandwiches in half.

  14. Remove the cling film.

  15. Enjoy the Avocado toast Sandwich!
