This Green Envy Bake really does spark envy in those who find out you made it... because they want some themselves! The top might be golden-brown because of all that melted, sharp cheddar cheese, but under the surface is an emerald, savory goodness of savory scallions, fresh spinach, and bright green peppers. Rice makes it hearty and filling, while ricotta adds tang and creaminess. Happy feelings follow each bite of Green Envy Bake!
